Allow the ribeye to come to about room temperature, and set your oven broiler to “hi” setting. Season with kosher salt and coarsely ground black pepper. Place ribeyes (only about 2 at a time) onto a skillet or broiler pan. Broil on high for about 5-6 minutes on one side. Flip the ribeyes and broil for an addition 4 minutes (Do make sure internal temperature reaches a food-safe 165 degrees). *For the last minute of the second side, place one tablespoon of salted, whole milk butter on top. It’s worth it, we promise! Remove, and serve piping hot!
